Miia's Caramel Bites

CARAMEL BITES

Consists of shortbread, homemade caramel and chocolate.

Shortbread

200g room temp butter

1dl sugar

5dl flour

1 teaspoon baking powder

Pinch of salt

1 egg


Put everything except the egg into a bowl and use your hands to mix it into a crumble. Add egg and mix untill combined.


Wrap the dough into cling-foil and set into the fridge to cool down for an hour.


Take a sheet of baking paper and ad a bit of flour to it. Then roll out the dough into about 2mm thick rectangle the size of your baking tray.


Bake in the oven for about 10 mins in 225 celsius or just until the edges start to get a bit of colour.


Leave it to cool while you start to make the caramel.

Caramel sauce


3dl of cream

3dl of brown sugar

1 tablespoon of butter


Add cream and sugar into a pan. Heat the mix into a boil and keep mixing. You will feel and see the mixture start to thicken after about 15 mins. You can test the caramel by putting cold water into a cup and when you let a drop fall into the water from your whisk the caramel should stay in a `teardrop` shape.


When ready take off heat and add butter. Let it cool down enough that when you pour it on top of the short bread it will not run off it.


Spread it evenly and let it set.


Chocolate


200g of dark chocolate of your choice

After the caramel has set melt your chocolate. Pour it on top of the caramel and spread evenly. 

Before the chocolate sets completely you can add additional decorations and make lines for the size of squares you want to cut them into later. This will help when cutting it after chocolate set completely so that the chocolate wont crack.
